"Self check-out" registers or kiosks can be found at many stores or businesses.  They can allegedly speed up the purchase process or reduce the number of cashiers required.

What deterrence is there to an individual determined to avoid payment or compensation?

There may or may not be more measures in place than guards or cameras.  "I will not steal" (back-masked in noise) didn't reduce thefts by 80% for department stores to monopolize.
